We monitor only temperature since we get fairly detailed power reports 
from the building management for billing and we aren't too much concerned 
with humidity.

We use a "Temptrax" primarily because at the time we were setting up 
Nagios there was a pre-made module for it:

Only a single probe per serial port, but only $135 for the whole thing.

We also use lm_sensors to pull temperature readings from motherboards. 
Tyan has started supplying sensors.conf files which is rather nice.
