Here's an article I wrote a while ago that gives an overview of how to
setup Postfix+amavis+spamassassin; it could be better (there is a bit of
SA configuration and add-ons, like razor, pyzor, etc that I make sure
are in place which should be added).  In fact, there are a number of
things I've added that are not reflected in the document, like Postgrey
and a shared IMAP mailbox that I can drop messages into that gets
automatically fed into the Bayesian trainer.
